Apple Toffee Squares

I’m about to prove how healthy I can be, with the following statement.

Apples are delicious.*

Note the asterix? This is because I have fine print to this statement.

Apples are delicious…. when they are part of a dessert.

Now I realize that an apple a day will keep the doctor away, but since I live with my own personal McDreamy, I have no need to see said doc. This is why I  make sure to eat my fair share of apples… with cinnamon, sugar and oats. No one said anything about how they were to be eaten in that rhyme, so I am making my own rules. Not that I have anything personal against plain old apples, we can still be friends, though I will not likely be writing an ode to them anytime soon.

With this in mind, and armed with my “Fall Recipes” attitude, I came across this recipe on robinhood.com, and changed it around a bit to make it (in my opinion ;)), tastier, and with fewer steps. And who doesn’t like things that are tastier and take fewer steps?

So join me in a toast to the fall season, and eat these delicious squares warm, with a healthy dollop of ice cream, and a drizzle of your favourite caramel sauce. Taysss-tee.

Toffee Apple Squares

Serves: 20
Ingredients
  • Apple Toffee Squares
  • Ingredients:
  • 2 cups all purpose flour
  • 2 cups oats
  • 1 cup light brown sugar, packed
  • 1 tsp each; baking soda, nutmeg and salt
  • 1 cup cold butter, cut into cubes
  • 6 cups thinly sliced peeled apples, about 6 apples
  • 2 tbsp granulated sugar
  • 2 tsp cinnamon
  • 1 cup skor bits
Instructions
  1. Preheat oven to 350°F (180°C). Grease a 9” x 13” (3 L) baking pan.
  2. In a large bowl, combine flour, oats, sugar, baking soda, nutmeg and salt until well mixed. Using your fingers, mix butter into mixture until crumbs form. Firmly pat half of mixture into bottom of pan.
  3. In a separate bowl, toss apples with sugar and cinnamon. Scatter evenly over base. In remaining crumble mixture, mix in 1 cup skor bits. Sprinkle remaining crumble mixture onto apples and press lightly.
  4. Bake in preheated oven 45 - 50 minutes until apples are tender and topping is golden. Cool slightly then cut into squares.
  5. Serve with ice cream and drizzled caramel sauce.

    how important is baking soda? i can’t find any and its late, so the stores aren’t open. do i really need it?

      Baking soda is what helps it rise – it isn’t that crucial in this recipe as it doesn’t need to rise much, so you could substitute an equal amount of baking powder or just leave it out and the taste will be the same even if it is slightly lower/denser.

    I’m sorry but I don’t understand the connection between having to go to a Dr. and living with your own personal McDreamy unless said McDreamy is also a Dr. There used to be people sleepless in Seattle, now there is me confused (as well as often sleepless) in O’ville.

      You must not watch Grey’s Anatomy :) McDreamy and McSteamy are the nicknames for the leading men (who play doctors) :)
