Saturday Sweets: Homemade Fudgesicles

I have to thank my BFF Alyssa for even giving me the idea to make homemade fudgesicles!  I can’t remember the last time I had a fudgesicle – elementary school sports days come to mind, when we got a treat to celebrate the end of a sweaty, competitive day.  I always loved the soft, chewy, fudgy cold treats, but it honestly never occurred to me to buy them.  Now, it will definitely never occur to me to buy them – these homemade fudgesicles are going to rock your socks.

These are incredibly fudgy, almost in dark chocolate territory, and the texture is that perfect fudgy frozen chewiness that you can take a bite out of straight out of the freezer.

Literally, I cannot believe how amazing these are, and my kids’ faces absolutely lit up when I told them what we were having for a snack.  We will be making these over and over again this summer, and all year long.

This may be the best disguised healthy treat for kids you ever did see.  They are also perfect for kids to make themselves…although you may want to help with the pouring into molds business.

Gemma whisked up the mixture for me in about 3 minutes, we froze them overnight, and we immediately needed to make another batch.  I genuinely didn’t have high expectations for such a healthy, natural version of a fudgesicle, so I made a tiny 4-popsicle batch to test out the recipe.  I was also making a lot of alterations to the original based on what I had in the house.  I have it on good authority (again, my BFF Alyssa) that the original version (with plain yogurt and maple syrup) is delicious, and I have it on equally good authority (my own family) that my version is a winner.

My only recommendation is to ease these babies out gently by running the mold under hot water for a minute before wiggling the popsicle out slowly.  I started out with brute force (because I have a lot of that, haha) and accidentally yanked the sticks right out, because the popsicles do stay fairly soft and chewable – perfect fudgesicle texture, in my opinion!

Rich, chocolatey fudge pops full of natural, healthy ingredients!

Serves: 8
Ingredients
  • ½ cup + 1 Tbsp honey
  • ½ cup unsweetened cocoa powder
  • 1 cup (preferably full fat) vanilla yogurt
  • 1¼ cups milk (I used half chocolate milk to make these even more fudgy)
  • Tiny pinch of salt
  • 8 2-oz popsicle molds
Instructions
  1. In medium bowl, whisk honey with cocoa until smooth. Add yogurt, milk, and salt and whisk thoroughly until no lumps remain.
  2. Divide mixture over popsicle molds, insert popsicle sticks, and freeze for at least 8 hours. Run molds until warm water to loosen when ready to pull out and eat.

    Yum, this looks incredible! Thanks for such a fun treat! Do you think I could substitute sugar for the honey?

      If you were substituting straight sugar I’d recommend melting unsweetened chocolate in place of the cocoa so you could incorporate/melt the sugar, otherwise you’d probably have a gritty texture. You can substitute maple syrup or corn syrup if that helps!
