Mom's Recipes: Easy Roast Chicken

So easy and delicious - who doesn't love roast chicken?!
Ingredients
  • 8 bone-in, skin-on chicken pieces
  • 2 Tablespoons soy sauce
  • 1 Tablespoon brown sugar
  • 2 Tablespoons red wine vinegar
  • 3 Tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • Salt and pepper
  • Handful of fresh parsley, chopped
Instructions
  1. Preheat oven to 425 degrees.
  2. In a small bowl, stir together soy sauce, brown sugar, red wine vinegar, olive oil, onion and garlic. Place chicken pieces, skin side up, in large baking dish or shallow roasting pan. Sprinkle chicken pieces with salt and pepper. Pour sauce ingredients over chicken.
  3. Roast, uncovered, for 30 minutes. Remove from oven and baste with sauce, then flip pieces and continue roasting for 10-15 minutes, or until chicken is cooked through.
  4. Turn oven to broil, flip chicken back to skin side up and broil for 2 minutes.
  5. Garnish with fresh parsley.
