Almond Ginger Granola

A unique granola packed with almonds and crystallized ginger, perfect on plain or vanilla Greek yogurt!
  • 2 cups large flake rolled oats (NOT instant or quick oats)
  • 1 cup sliced almonds
  • 1⁄4 cup packed brown sugar
  • 3 tbsp finely diced crystallized ginger
  • 2 tbsp vegetable oil
  • 2 tbsp liquid honey
  • 1 tsp vanilla
  • 1 pinch of salt
  1. Preheat oven to 300 degrees Fahrenheit. Line a large baking sheet with parchment paper or grease lightly.
  2. In large bowl, stir together oats, almonds, brown sugar and ginger.
  3. Put oil, honey and vanilla in small microwavable bowl. Heat about 20 seconds in microwave so that it gets runny. Pour over oat mixture, stirring to coat.
  4. Spread on prepared baking sheet and bake until golden, 25-30 minutes, stirring once. Let cool completely on pan on rack.
  5. Store in airtight container at room temperature or in the fridge for up to 3 weeks.
