Double Chocolate Skillet Cookie

A rich, gooey brownie-like cookie baked in a skillet makes an easy one-dish dessert. Serve warm with ice cream.
Ingredients
  • ½ cup butter or hard margarine
  • 1 cup granulated sugar
  • ⅓ cup + 1 Tbsp cocoa powder
  • 1 large egg
  • 1 Tbsp vanilla
  • 1 cup all purpose flour
  • ¼ tsp salt
  • ¼ tsp baking powder
  • 1 cup chocolate chips or chunks
Instructions
  1. Preheat oven to 350 degrees.
  2. In oven-proof 8" skillet, melt butter over medium-low heat. With a wooden spoon, stir in sugar and cocoa until dissolved.
  3. Remove from heat and stir in vanilla and salt. Quickly stir in egg, then add flour and baking powder and stir until combined. Stir in chocolate chips.
  4. Bake for 16-18 minutes, until edges are set and centre is just set.
  5. Let sit 5 minutes before slicing or scooping to serve. Serve warm with ice cream.
  6. Leftovers can be stored in an airtight container at room temperature for up to 5 days.
