Marshmallow Chocolate Chip Squares

A sweet, marshmallow-studded chocolate chip square that stays chewy for days.
Ingredients
  • ½ cup butter, softened
  • ⅓ cup spreadable chocolate cream cheese (or regular cream cheese)
  • ½ cup granulated sugar
  • 1 cup lightly packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chopped milk chocolate (plus an additional ¼ cup for topping)
  • 1½ cups miniature marshmallows (plus an additional ½ cup for topping)
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Grease a 9x13" baking dish or spray with cooking spray.
  2. In large bowl with an electric mixer, beat butter and cream cheese briefly to combine. Add both sugars, eggs, and vanilla and beat for 3-4 minutes, until pale and very creamy.
  3. Add flour and salt to bowl and mix just to combine.
  4. Stir in chocolate chunks and marshmallows.
  5. Dump batter into prepared pan and spread it out with slightly dampened hands, pressing it as smooth as possible. Stick remaining chocolate chunks and marshmallows randomly into the dough.
  6. Bake for 22-24 minutes, until bars are just golden and juuuust set in the middle - do not overbake or they will be dry. Let cool completely before cutting into bars.
  7. Store in an airtight plastic container at room temperature for up to 5 days, or wrap well and freeze for longer storage.
