Golden Coconut Macaroons

A simple, light coconut macaroon that comes together in minutes.
Ingredients
  • 2 egg whites
  • 1⁄2 tsp vanilla
  • 2 Tbsp cake and pastry flour
  • 1⁄2 cup granulated sugar
  • 1⁄4 tsp salt
  • 2 cups shredded coconut
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Line large cookie sheet with parchment paper or foil.
  2. In a bowl, beat egg whites and vanilla until soft peaks form.
  3. In another bowl, whisk together flour, sugar 
and salt. Fold in beaten egg whites with a spatula, then fold in coconut, blending thoroughly.
  4. Drop by rounded teaspoonfuls (5 mL), about 
2 inches (5 cm) apart, onto prepared cookie sheet. Bake in preheated oven for 16-20 minutes or until as golden brown as you like (I went with about 16 minutes). Immediately transfer to wire racks to cool.
