Saturday Sweets: No-Bake Chocolate Peanut Butter Oat Bars

Super quick to throw together, no baking needed, and a perfect healthy peanut butter chocolate fix.
Ingredients
  • 1½ cups smooth peanut butter
  • ½ cup honey
  • 1 cup dark or semi-sweet chocolate chips
  • 2 cups quick cooking oats
  • 1 cup sweetened shredded coconut
  • ⅓ cup ground flaxseed
  • 1 tsp vanilla extract
  • Pinch of salt
Instructions
  1. Microwave peanut butter, honey, and chocolate chips in large bowl on full power for 45 seconds. Stir until smooth and combined, microwaving in additional 10 second increments if needed to melt chocolate.
  2. Add oats, coconut, ground flax, vanilla, and salt and stir to coat evenly.
  3. Press into parchment paper-lined or lightly greased 8x11" or 9x9" baking dish and cool in the fridge until set (about 1 hour). Lift out of pan with parchment paper and place on cutting board. Cut into 16-20 squares. Store in airtight container in fridge or freezer. (If you like slightly thinner squares, or want to cut them more like granola bars, use a 9x13" pan).
Notes
If making these gluten and dairy free, ensure your oats are certified gluten free and your chocolate is dairy free, such as the "Enjoy Life" brand.
