BBQ Pulled Pork Pasta

A quick, easy pasta dish that's a nice barbecue-y twist on classic beef bolognese.
  • 3½ cups dry, uncooked pasta (I used rotini)
  • 1 cup tomato sauce/pasta sauce
  • 3 Tbsp tomato paste
  • ½ cup water
  • ¾ cup barbecue sauce
  • 1 tsp dried Italian seasoning
  • ¼ cup chopped fresh basil or oregano
  • 2 cups cooked, shredded pulled pork
  • 2 green onions
  • Cheese for topping (optional)
  1. Combine tomato sauce, tomato paste, water, and barbecue sauce in a medium saucepan and bring to a simmer. Add seasoning and fresh herbs.Stir in pulled pork.
  2. While sauce simmers, cook pasta according to package directions.
  3. When pasta is ready, drain and toss with meat sauce. Top with green onions and cheese and serve immediately.
