Saturday Sweets: Peanut Butter Chocolate Banana Bread

Classic banana bread with a sweet and salty twist!
Ingredients
  • 1 cup all purpose flour
  • ¾ cup whole wheat flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • ½ cup granulated sugar
  • ¼ cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla
  • 1 cup mashed, ripe banana (2 large or 3 medium bananas - it doesn't have to be exactly 1 cup.)
  • ¼ cup creamy peanut butter, softened in the microwave for 10 seconds
  • ½ cup chocolate chips
Instructions
  1. Preheat oven to 350 degrees and grease a 9x5" loaf pan. (If your loaf pan is 8x4", bake an additional 3-5 minutes).
  2. Whisk together flours, baking soda and salt in a small bowl.
  3. In larger bowl, whisk together sugar, oil, egg, vanilla, mashed banana, and softened peanut butter.
  4. Add dry ingredients to wet and stir until well combined. Stir in chocolate chips.
  5. Pour batter into loaf pan and bake for 45-50 minutes, until a toothpick inserted in the center comes out clean.
