EGGNOG CHOCOLATE CHIP LOAF

Ingredients
  • ½ cup butter, melted
  • ¾ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2⅛ cups cake & pastry flour OR all purpose flour
  • ¾ teaspoon baking soda
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • ⅔ cup semi-sweet chocolate chips
  • ¾ cup eggnog
Instructions
  1. Preheat oven to 350 degrees F. Grease a 9x5 loaf pan and set aside.
  2. In small bowl, whisk together flour, baking soda, baking powder, and salt. Stir in chocolate chips.
  3. In a large bowl, whisk melted butter with sugar until smooth. Whisk in vanilla extract and eggs until very smooth.
  4. Stir in half of the flour mixture, then stir in the eggnog until smooth. Add remaining dry ingredients and stir until just combined.
  5. Pour evenly into prepared loaf pan and bake for 50-53 minutes, until top is golden and cake is just set. Let cool in pan for 5 minutes, then transfer to cooling rack to cool completely. Enjoy fresh, or store tightly covered at room temperature for up to 5 days.
