Almond Joy Cookies

Delicious cookies with almond, coconut and chocolate!
  • 1 cup salted butter, softened
  • 1 ½ cups granulated sugar
  • 2 eggs
  • 1 ½ tsp almond extract
  • 2 ¼ cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups sweetened shredded coconut
  • 3 cups chocolate chips
  • 2 cups slivered almonds
  1. Preheat the oven to 350 degrees. Line baking sheet with parchment paper and set aside.
  2. In large bowl, cream together the butter and sugar until light and creamy.
  3. Add the eggs and almond extract, and mix well.
  4. Mix the dry ingredients together in a separate bowl, then gradually add the dry ingredients to the butter mixture, mixing until fully incorporated.
  5. Stir in the coconut, chocolate chips and almonds.
  6. Scoop the cookies onto the prepared baking sheet and bake for about 10 minutes. The cookies will still be slightly soft/underbaked - they will set further as they cool.
  7. Let cool on pan for a minute or two before removing to rack to cool completely.
