Gluten Free Cranberry & White Chocolate Oatmeal Cookies

Ingredients
  • ¾ cup butter or margarine
  • ¾ cup brown sugar, packed
  • ½ cup white sugar
  • 1 egg
  • 2 tbsp water
  • 2 tsp vanilla
  • ¾ cup Gluten Free all-purpose flour (*Regular all-purpose flour can also be used, and then omit the xantham gum)
  • ¼ tsp xantham gum
  • ¾ tsp baking soda
  • 2½ cup oats
  • ½ cup white chocolate chips
  • ½ cup dried cranberries
  • 1 tbsp chia seeds
Instructions
  1. Cream first 6 ingredients together on medium speed of electric mixer until light and creamy. Combine flour, xantham gum and soda. Add to creamed mixture, beating on low speed until blended. Stir in oats, white chocolate chips, dried cranberries and chia seeds.
  2. Refrigerate dough for 1 hour.
  3. Drop dough by heaping teaspoonfuls onto greased or parchment paper-lined baking sheets. Bake at 350 for 11-14 minutes, or until light golden.
