Cookies 'n' Cream Happy Cookies

Chewy, chocolately cookies with a cookies 'n' cream kiss pressed into the top straight out of the oven.
  • 1 cup butter, softened to room temperature
  • 2 cups granulated sugar
  • 2 large eggs
  • ¾ cup cocoa powder
  • 1 Tbsp vanilla extract
  • 2 cups all purpose flour
  • 1 tsp salt
  • ½ tsp baking powder
  • About 60 Hershey's kisses (Cookies 'n' cream or your favourite flavour)
  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. With electric mixer, cream together butter and sugar. Add eggs and beat well. Add cocoa and vanilla and beat again.
  3. In separate small bowl, whisk together flour, salt and baking powder. Add this to wet ingredients and beat on low until combined.
  4. Scoop dough by generous teaspoonfuls onto prepared baking sheet and roll gently into balls with your hands. Bake in preheated oven for 9-10 minutes. While they bake, unwrap kisses and get ready :)
  5. Remove from oven and immediately place an unwrapped kiss in the center of each cookie. Let cool 5-10 minutes before using a spatula to remove cookies to a cooling rack. Kisses will re-harden fully as they cool. Repeat with remaining dough.
  6. Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months and thaw as needed.
