Bacon and Scallop Fettuccine Alfredo

A simple way to impress on date night!
  • 1 cup scallops
  • 4 slices of bacon
  • 1 crushed garlic clove
  • ¼ cup white wine
  • 1 cup of your favourite alfredo sauce
  • fettucine pasta, regular, or in my case, rice pasta!
  • 1 pinch salt and pepper
  1. Bring large pot of water to boil and cook pasta to al dente, according to package directions.
  2. Meanwhile, cook the bacon until crisp. Remove the bacon to paper towel - do not discard the bacon grease! Sprinkle the scallops with salt and pepper and add them to the pan with the bacon drippings. Sear them until they are a light brown color on both sides, then remove them from the pan.
  3. Add the garlic, wine, and Alfredo sauce to the same pan. Cook for about 2 minutes. Return the scallops to the pan and crumble bacon over them. Continue cooking for 2 more minutes.
  4. Toss the fettuccine with the scallops and sauce and serve hot.
