Mango Squares

A bright, tart, creamy square perfect for spring and for mango lovers!
Ingredients
  • CRUST:
  • ⅓ cup butter, melted
  • 1 cup all-purpose flour
  • ¼ cup sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • TOPPING:
  • ½ cup sugar
  • 1 Tablespoon cornstarch
  • 3 large eggs
  • 1 cup mango puree
  • 3 Tablespoons lemon juice
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Lightly grease an 8" square pan, then line it with parchment paper, letting paper overhang on two sides for easy removal of squares.
  2. Melt butter in medium bowl, then stir in all other crust ingredients until well mixed. Press into prepared dish and bake for 15 minutes.
  3. Meanwhile, make mango puree: Process about 2 cups cubed ripe mango in blender or food processor until smooth (fresh or thawed frozen mango both work).
  4. In medium bowl, combine sugar and cornstarch. Whisk in eggs, then mango puree and lemon juice until smooth. Pour evenly onto the partially-baked crust, then bake another 20-22 minutes, until filling is set.
  5. Let cool on wire rack, then refrigerate. Let chill at least two hours before removing from pan and cutting into squares. Store in the refrigerator.
