Speculaas Squares

  • 1 cup butter or baking margarine, softened to room temperature
  • 1 cup granulated sugar
  • 1 cup lightly packed brown sugar
  • 2 large eggs
  • ¼ teaspoon vanilla extract
  • 3 cups all purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¾ teaspoon allspice
  • ½ teaspoon ginger
  1. Preheat oven to 325 degrees Fahrenheit. Lightly grease a 9x13" baking dish and set aside.
  2. In large bowl, with electric mixer, beat butter and sugars on medium speed until light and creamy, 2-3 minutes. Add eggs and vanilla and beat well.
  3. Add flour, baking soda and spices to bowl and stir well on low to combine.
  4. Spread batter into prepared pan - I find it works best to push/pat it into place with slightly dampened hands. Bake at 325 degrees for 30 minutes, until edges are lightly browned and centre no longer jiggles. Let cool before slicing into bars.
