Slow Cooker Granola

High in fibre and high in deliciousness - add your favourite nuts and seeds with the oats, and/or stir in your favourite dried fruits and chocolate chunks at the end.
Ingredients
  • 5 cups old-fashioned rolled oats (not quick-cooking)
  • ½ - 1 cup almonds or other nuts/seeds
  • ¼ teaspoon salt
  • ⅔ cup honey
  • ⅓ cup butter
  • ½ cup peanut butter, smooth or chunky
  • 1 teaspoon cinnamon
  • 1 tablespoon vanilla
  • 1 cup dried fruit
Instructions
  1. Lightly grease crock-pot cooking spray or a bit of oil. Add the oats, nuts and salt. In a large measuring cup or small glass bowl, combine the honey, oil, peanut butter, cinnamon and vanilla. Microwave for a minute to soften, then stir until very smooth.
  2. Pour the liquids into the crockpot and stir well to thoroughly coat the oats. Place the lid on the crockpot, leaving it slightly vented. Cook on HIGH for 1.5 - 2 hours, stirring well every 30 minutes. Stir in the dried fruit right at the end - this is when I also like to stir in ½ cup mini chocolate chips for an extra treat. It can be eaten right away, warm and slightly soft, or dump the granola out on a large baking sheet or two and let it cool completely before transferring to an airtight container - it will crisp up more as it cools.
  3. This keeps for up to a month in the fridge, and can be frozen for longer storage - transfer to fridge overnight to thaw.
