Five-Banana Bread

A moist, dense banana bread jam-packed with 5 large bananas, the riper the better.
Ingredients
  • 2 cups all purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • 2 large eggs
  • 5 medium-large ripe bananas, mashed
  • 1 cup sugar
  • ½ cup vegetable oil
  • TOPPING (optional):
  • 2 Tablespoons butter, melted
  • ⅓ cup brown sugar
  • ¼ cup flour
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Grease or lightly spray a 9x5" loaf pan and set aside.
  2. Mash bananas well with a fork on a large plate, until very smooth. Transfer to a large bowl and whisk in eggs, sugar and oil. Add flour, baking powder, baking soda, salt and cinnamon and stir well, until no streaks of flour remain.
  3. Scrape batter into prepared pan.
  4. For topping, melt butter in a small bowl and stir in flour and sugar. Sprinkle over batter before baking.
  5. Bake for 55-60 minutes, until golden and a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, then run a knife around the edge and invert to remove from pan. Put right side up on a cooling rack and let cool fully before slicing, ideally overnight.
