Chocolate Oat Muffins

A quick and easy muffin recipe great for munching at any time of day. I found this recipe made 11 good-sized muffins.
Ingredients
  • 1¼ cups all purpose flour
  • 1 cup granulated sugar
  • ¾ cup quick cooking oats
  • ⅓ cup cocoa powder
  • 1 Tbsp baking powder
  • ½ teaspoon salt
  • ½ cup semi-sweet chocolate chips, ideally miniauture (optional)
  • 2 large eggs
  • 1 cup milk (preferably NOT skim)
  • ⅓ cup vegetable or canola oil
  • 1 teaspoon vanilla
Instructions
  1. Preheat oven to 375 degrees Fahrenheit. Grease or line 11 muffin cups with paper liners.
  2. In large bowl, whisk together flour, sugar, oats, cocoa, baking powder and salt. Stir in chocolate chips, if using.
  3. In medium bowl, whisk eggs, milk, oil and vanilla until very smooth.
  4. Add milk mixture to flour mixture, stirring until just moistened and no streaks of flour remain.
  5. Spoon batter into prepared muffin cups and fill extra muffin cup half full with water to ensure even baking.
  6. Bake in preheated oven for 18-20 minutes, or until a toothpick inserted in center of muffin comes out clean. Let sit in pan for 5 minutes, then transfer to wire rack to cool.
