Apple Cinnamon Energy Bars

A healthy, hearty bar perfect for on-the-go snacks. Add your favourite mix-ins - we like hemp hearts, sunflower seeds, dried cranberries and chopped nuts, but the sky's the limit!
  • 3 cups quick cooking oats
  • 1 cup all-purpose or whole wheat flour
  • ¾ cup shredded coconut
  • ½ cup wheat bran or ground flax
  • ⅔ cup lightly packed brown sugar
  • 1½ teaspoons ground cinnamon
  • 1 cup dried fruit and/or nuts/seeds of your choice, finely chopped
  • 1½ teaspoons baking soda
  • ½ cup melted butter or margarine
  • 1 large egg
  • 1 cup applesauce
  1. Preheat oven to 350 degrees Fahrenheit. Lightly grease a 9x13" baking dish, or line with parchment paper, and set aside.
  2. In small bowl, melt butter and set aside to cool.
  3. In large bowl, stir together oats, flour, coconut, wheat bran, brown sugar, cinnamon, dried fruit and baking soda.
  4. Whisk egg and applesauce into melted butter. Stir wet ingredients into oats mixture until well combined. Press very firmly into prepared pan.
  5. Bake for 20-25 minutes, until set and edges are just golden. Let cool completely before cutting into bars. Store in an airtight container in the fridge, or individually wrap and freeze for easy grab-and-go snacks.
