Banana Bran Muffins

- 1¼ cups all purpose flour
- 1 cup oat bran or wheat bran
- ½ cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- Pinch of salt
- ¾ cup milk
- ¼ cup olive oil
- 1 large egg
- 1 teaspoon vanilla
- 1 large or 2 small ripe bananas, mashed (about 1 cup)
- Preheat oven to 375 degrees Fahrenheit and line a 12-cup muffin pan with papers.
- In large bowl, whisk together flour, oat bran, sugar, baking powder, baking soda and salt.
- In medium bowl, whisk together milk, oil, egg, vanilla, and mashed banana.
- Add wet ingredients to flour mixture and stir until well combined.
- Divide over 12 muffins and bake for 17-18 minutes, until a tester comes out clean and tops are golden. Remove from pan to cool on rack.
- Store in an airtight container at room temperature for 3 days, or freeze for longer storage.
