Peanut Butter Date Snacking Bars

A healthy no-bake bar with just the right amount of chocolate, peanut butter and crunch.
Ingredients
  • 1 cup rolled oats
  • 1 cup pitted dates
  • 3½ tbsp cocoa powder
  • 3 tbsp honey or maple syrup
  • ¼-1/2 tsp salt (adjust to taste - depends whether your nut butter is salted or unsalted)
  • ½ cup peanut butter or another nut butter
  • 1 tsp vanilla extract
  • ¾ cup regular or gluten free Rice Krispies + 2 Tbsp for topping
Instructions
  1. Line an 8-inch x 8-inch baking dish with parchment paper, or grease lightly.
  2. In a large food processor, process oats until crumbly. Add dates and process until breaking down into smallish pieces (about 30 seconds). Add the cocoa powder, honey, salt, peanut butter and vanilla. Puree until mixture becomes uniform and sticky.
  3. Add brown rice cereal and pulse through to disperse evenly. The mixture should form some balls in the processor.
  4. Transfer mix to prepared pan and press down evenly (this is easiest with slightly damp hands or spray the back of a spatula with cooking spray and use that).
  5. Sprinkle on remaining cereal and press in. Makes 16 squares or 10-12 bars. Store in the fridge or at cool room temperature.
Notes
I found Medjool dates worked best as they are they softest, but any will work. If yours are dry, you can pour a bit of boiling water on them, let them sit for a few minutes and drain any extra liquid before using as directed.

If making these gluten free, ensure you have certified gluten free oats.
