Oven-Baked Apple Crumble Pancake

A fluffy, one-dish pancake baked in the oven so everyone can enjoy their hot pancake at the same time!
Ingredients
  • TOPPING:
  • 2 Tablespoons butter
  • 1 large apple, thinly sliced (peeled or not)
  • ½ teaspoon cinnamon
  • 2 Tbsp brown sugar
  • ⅓ cup quick cooking oats
  • PANCAKE:
  • 1 cup all purpose flour
  • 2 Tablespoons granulated sugar
  • 1½ teaspoons baking powder
  • ¼ teaspoon cinnamon
  • ½ teaspoon salt
  • 2 Tablespoons butter, melted
  • ¾ cup milk (preferably 2% or whole milk)
  • ½ teaspoon vanilla
  • 1 large egg
Instructions
  1. Preheat oven to 375 degrees Fahrenheit. Lightly grease a 9" or 10" round pie plate or oven proof skillet.
  2. Start with topping mixture: In small skillet, melt butter over medium heat and lightly sauté apples and cinnamon. Cook for 3-4 minutes, until apples are just softened, then remove from heat and stir in brown sugar and oats. Set aside.
  3. While apples are softening, whisk together flour, sugar, baking powder, cinnamon, and salt.
  4. In a separate bowl, whisk melted butter, milk, vanilla and egg. Whisk mixture into dry ingredients just until combined, then pour batter into prepared pan.
  5. Scoop topping evenly over the batter and bake until edges are golden and tester comes out clean from the center, 22-24 minutes.
  6. Serve warm, with whipping cream, syrup, ice cream, or a dusting of icing sugar - or just as is, it's delicious any way!
Notes
For a quick and easy topping, skip the apple mixture and simply sprinkle a cup of your favourite fresh or frozen berries over the batter before baking.
