Apple Crumble Quick Bread

A moist, apple-studded quick bread with a perfect crumbly streusel topping.
Ingredients
  • 2 cups all purpose flour
  • ½ cup lightly packed brown sugar
  • 2 teaspoons cinnamon
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup salted butter, melted
  • 1 cup buttermilk or sour cream
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 1 cup diced, unpeeled apple (about 1 apple)
  • TOPPING:
  • ¼ cup butter, melted
  • ¼ cup all purpose flour
  • ¼ cup rolled oats
  • ¼ cup lightly packed brown sugar
  • ½ teaspoon cinnamon
  • ¼ cup chopped walnuts (optional)
Instructions
  1. For topping, melt butter in a small mixing bowl, then add all other ingredients and mix until crumbly. Set aside. Grease a 9x5" metal loaf pan and set aside.
  2. For loaf, in a large bowl, whisk together flour, brown sugar, cinnamon, baking powder, baking soda, and salt.
  3. In a separate microwave-safe bowl, melt butter, then whisk in buttermilk, vanilla, and egg. Make a dip in the center of the dry ingredients and dump in the wet ingredients all at once. Add apples and stir just until everything is combined and there is no visible flour left.
  4. Pour mixture into prepared loaf pan and top with crumble topping, pressing topping in gently with a flat hand. Bake at 350 degrees for 45-50 minutes, until a toothpick comes out clean from the center. Remove from oven and let rest in pans for 10-15 minutes before running a knife around the edges and turning out on a cooling rack to cool completely.
Notes
This is a very versatile quick bread recipe - substitute 1 cup diced pear, shredded zucchini, or shredded carrots in place of the apple, and/or add ⅓ cup chopped walnuts or pecans, add ½ teaspoon ginger and/or nutmeg...the possibilities are endless, and all delicious :)
