FUDGY BROWNIES WITH COOKIE DOUGH FROSTING

Ingredients
  • BROWNIE:
  • ½ cup butter
  • 1⅓ cups (8 oz) semi-sweet chocolate chips
  • 1 cup sugar
  • ½ tsp salt
  • 3 eggs
  • 1 tsp vanilla
  • ¾ cup flour
  • COOKIE DOUGH FROSTING:
  • ½ cup butter, at room temperature
  • ¼ cup light brown sugar, packed
  • 1⅓ cups confectioners’ sugar
  • ⅓ cup all-purpose flour
  • ¼ tsp. salt
  • 1 tbsp. milk
  • 1 tsp. vanilla extract
Instructions
  1. Preheat oven to 350 degrees. Spray a 9-inch square or round pan thoroughly with nonstick cooking spray.
  2. Place butter and semi-sweet chocolate in a large microwave-safe bowl and microwave for 1 minute, then in additional 30 second increments if necessary until chocolate is mostly melted. Stir to melt chocolate completely.
  3. Whisk sugar, salt, and eggs into chocolate mixture just until combined (don't overbeat, or the brownie will rise too high and then fall).
  4. With a wooden spoon, stir in flour until no streaks remain.
  5. Pour batter into prepared pan and bake for 25-30 minutes (until center is just barely set and toothpick comes out with a few crumbs sticking to it).
  6. Let cool completely before frosting.
  7. FOR FROSTING:
  8. Beat together butter and brown sugar until creamy (2-3 minutes). Mix in icing sugar until smooth. Beat in flour and salt, then add milk and vanilla and beat until very smooth. Spread evenly over cooled brownies.
Notes
Store iced brownies in the fridge, but remove an hour prior to serving for maximum flavour. Room temperature brownies always tastes best!
