GRILLED PULLED PORK SANDWICHES

Ingredients
  • 1 small onion, thinly sliced
  • 1 Tbsp brown sugar
  • 4 Tbsp butter, divided
  • 1 - 1½ cups cooked pulled pork, mixed with BBQ sauce to desired sauciness
  • 6 - 8 slices bread
  • 1 cup grated Cheddar or Monterey Jack cheese
Instructions
  1. Sauté onion in pan over medium-low heat with brown sugar and 1 Tbsp butter until soft and translucent, about 10-15 minutes.
  2. Toss pulled pork with BBQ sauce. Add to onion for last couple minutes of cooking to heat through.
  3. Meanwhile, grate cheese and butter bread slices on one side.
  4. Top 3 or 4 slices of bread evenly (on unbuttered side) with pulled pork and cheddar cheese. Top with remaining bread and cook in same pan you used to cook onions, over medium-high heat, until golden brown on each side (3-4 minutes per side).
  5. Serve warm.
Notes
These are also good with bacon bits added, or roasted peppers.
