Chai Spice Cookies

A spicy, savoury cookie that tastes like chai tea!
Ingredients
  • 1 cup butter, softened to room temperature
  • 1 cup granulated sugar
  • 1 cup lightly packed brown sugar
  • 2 large eggs
  • ½ tsp vanilla or almond extract
  • 3 cups all purpose flour
  • 1½ tsp baking soda
  • 1 tsp cream of tartar
  • 1 tsp ground cloves
  • 2 tsp ground cardamom
  • Pinch of salt
  • 2 tsp cinnamon
  • ½ tsp allspice (optional)
Instructions
  1. Preheat oven to 325 degrees Fahrenheit and pull out a large cookie sheet or two.
  2. In large bowl, beat butter with sugars until fluffy and pale (about 2 minutes). Add eggs and vanilla and beat well.
  3. Add flour, baking soda, cream of tartar and spices to the same bowl and mix until well combined.
  4. Roll dough into approximately 1-inch balls and place about 2-inches apart on ungreased cookie sheet. Bake for 11-14 minutes, until centers are set and edges are beginning to turn golden. Let cool on cookie sheet for 5 minutes before removing to rack to cool completely. Repeat with remaining dough.
Notes
If you don't have cream of tartar, Google tells me you can omit both the baking soda and cream of tartar (which work together) and replace with an equal amount of baking powder. If you try it, let me know how it goes!
